Chocolate Chip Shortbread Recipe

Here is a quick and easy recipe that all the family will love, especially dunked in a hot cup of tea! Created by Lauren Welsh our newest member of the team at BFRS, former RAF Chef.

These are very simple to make and taste delicious. Perfect for the kids and all the family!

Roughly makes about 28.


  • 300g plain flour
  • 100g caster sugar
  • 250g salted butter (softened)
  • 100g chocolate chips or chopped chocolate
  • 1/2 tspn vanilla essence
  • Caster sugar to sprinkle (optional)


  • Preheat oven to 170°c.
  • Sift flour in a bowl and add the sugar.
  • Work in the butter to a crumble consistency and add the vanilla essence.
  • Knead in the chocolate pieces until it all comes together to a dough form.
  • Roll the dough into a long sausage shape. (This is easier to do rolled in clingfilm)
  • Cut into slices about 1.5cm, maintaining the circular shape.
  • Space evenly onto baking trays, greased or lined with greaseproof paper.
  • Put in oven and bake for around 8 minutes, or until firm and a pale golden colour.
  • Allow to cool and then serve.
